Hand-picked, whole-bunch pressed, fermented in stainless steel, second fermentation in pressurised tanks (Charmat Method) over 4 weeks. Light straw in colour. Grapefruit pith, honeysuckle aromatics and candied pear. An expansive flavour profile across the palate, a gentle savouriness with citrus zest, pear and almond meal. A generous prosecco with texture that goes down very well, indeed. Jeni Port - James Halliday August 2020
The 2019 Il Soffio (which translates to the breath) is named for the gentle breeze that blows through the valley in the evening, cooling the fruit on the vine to enable the creation of the delicate, fresh bubbles. James Halliday Silver rating 93 points, it’s a sparkling like no other.
Our 2019 Il Soffio Prosecco is hand picked and whole bunch pressed. Aromatics include hints of green apple, wisteria flowers and slight citrus notes, whilst the palate is dry with a creamy mouthfeel. The wine has lovely length and softness with a touch of sweetness but a long dry finish.
